Spicy Tailgate Meatballs
Well who does not love a good tailgate? Unfortunately, they are typically involved with some very nasty fat filled foods that will definitely break your meal plan. Here is a solution to that, we suggest using ground turkey as it has less calories than beef.
What you need:
- 1 cup of whole wheat bread, cubed
- 3 lbs (lean) ground turkey (optional, lean ground chicken)
- 3 eggs, beaten
- 2 tsp salt
- 1 tsp paprika
- ½ tsp cayenne pepper
- 4 Tbsp fresh sage, chopped
- ¾ cup onion, chopped
- 2 garlic cloves, minced
- ¾ cup fresh parsley, chopped
- 2/3 cup parmesan cheese
In a large bowl, combine the turkey, onions, bread cubes, spices, and cheese. Using your hands, blend the ingredients together. Finally, add the egg and mix until well combined.
Using your hands, form mixture into approximately 40 meatballs (approximately 1 ½ inch in diameter).
Place the meatballs on a cookie sheet and bake at 350 degrees for 20-25 minutes (or until cooked through).
Baked Tilapia with a Spicy Twist
Who does not love some awesome baked tilapia? Here is a good recipe with a good spicy twist to it.
What you need:
- 4 tilapia filets
- 2 tablespoons extra-virgin olive oil
- 2 ripe mangos, peeled and diced
- 1 small red onion, diced
- 1 medium tomato, seeded and diced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- Juice of 1 lime
- Salt and pepper, to taste
- Greek yogurt, low-fat (optional sour cream), and fresh chopped cilantro, for serving
Preheat oven to 350 degrees F. Season the fish filets with salt and pepper and drizzle with the olive oil. Bake for 8 to 12 minutes, until fish flakes easily with a fork.
While the fish is baking, make the salsa by combining the remaining ingredients. Season with salt and pepper.
To serve, top the fish with the salsa, Greek yogurt and fresh chopped cilantro.
Spicy Chicken Skewers
Want something that EVERYBODY will love? Well this is it, everyone one will die over these skewers.
What you will need:
- 6 (skinless) chicken breast fillets
- 2 teaspoons canola olive oil
- 2 teaspoons dried oregano
- 1/2 teaspoon black pepper
- Kosher or sea salt to taste
- 2/3 cup wing sauce, Skinny Ms. Wing Sauce recipe
Rinse chicken and pat dry. Cut fillets into 21 pieces, horizontally. Combine oregano, black pepper and salt, sprinkle on both sides of chicken pieces.
In a large, non-stick skillet, turn to medium-high heat, add oil. When oil is hot, but not to the smoking point, add the cubed chicken pieces. Sear chicken until brown and crispy on both sides. Pour off any fat.
Add 2/3 cup wing sauce to skillet, reduce heat to medium-low, cover and continue cooking until chicken is cooked through and sauce is reduced. Remove from heat, allow to cool slightly and place chicken pieces on individual skewers.
